Use mimic for dashboard writing

We can probably use https://github.com/bwplotka/mimic for writing dashboards here. It has some really cool FilePools and generators with support for different encodings.

With how we have to generate YAML and JSON in this repo, I think it might be worth using this in DashboardWriter
