revert nimv2 docs and examples

Context

• we had the terrible idea of maintaing v1 and v2 on the same branch
• however, this proved unattainable after going down the v2 hardening path and we failed miserably
• we should maintain the existing v1 branch since its near complete

Technical

• should be able to just drop whatever the v2 commits are
• update the github actions to also protoect nimv1 branch

Asides

• there may be additional learnings on v2 (e.g. experimental views) that should also exist on nimv1
