There is various onscreen keymaps for Fold 6 (or maybe for too 2160x1856 screens and 20.9:18 aspect ratios?) that uses Panda Gamepad Pro app. These are my ready to go settings that you can import in Panda's app

There should be in all of this keymaps layout changer and it's button is "mode" button.
Panda's ui hiding button is "left joystick" + "start"

In this game, there is also remote control app for car and it's also mapped.
Gamepad that have "mode" button, can change control mapping in mid game. For vehicle control use button control in games settings.
