Document Live Activity progress bar direction

Proposed change

Document the new progress_bar_direction field for iOS Live Activities, added in home-assistant/iOS#5180. Adds the field to the payload table and a short section explaining fill vs. drain behavior with a countdown example.

It's interesting, I've never seen this request for Android. Was this in response to user feedback? No objection to the change itself, I can see why it might be useful.

For your reference, the example doesn't show a progress bar on Android, only a timer counting down

Yes, and it made sense to me when the user explained, sometimes you have a countdown but the intention of the action makes more sense if the progress bar is "increasing" it's value, on other situations (like something is running-out) it makes more sense if the progress bar is decreasing it's value.

And sometimes it's just how each of our brains works when they see countdowns/timers haha so since it's not a lot of work I thought about adding this as a nice touch.
