Support dSYMs with IPA build uploads

Port IPA + dSYM support for build upload from getsentry/sentry-cli#3393 into this CLI.

Current behavior

• build upload accepts IPA uploads, but does not take an explicit dSYM path to associate app debug symbols with the upload.
• IPA packages often omit dSYMs (especially after app thinning), so clients may need to construct a synthetic XCArchive themselves before upload.

Gap

• sentry-cli PR #3393 adds a --dsym option that finds the specified dSYM bundles, copies them into the synthetic XCArchive, and uploads with the IPA.
• That path is still missing here, so tooling that depends on this CLI (and migrations off sentry-cli) cannot offer the same IPA + dSYM upload flow.

Jared, start working on this. Investigate the current IPA upload flow and dSYM requirements, implement the smallest correct supported path with targeted tests, self-review it, and open a scoped PR. Escalate only if a concrete external dependency truly prevents progress.
